Grilled Miso Chicken 鶏の味噌漬け焼き

Grilled Miso Chicken  | Easy Japanese Recipes at JustOneCookbook.com

I hope you are enjoying barbequing this summer as I’m sharing an easy and delicious Grilled Miso Chicken today!  I use miso in many of my recipes and today I used Hikari Miso‘s organic white miso to make ginger miso marinade.

I mostly use chicken thighs for my recipes because it is more flavorful and juicer than chicken breasts.  However, today I made Grilled Miso Chicken using chicken breasts.  I’ve made this recipe a few times and every time I was surprised to see how juicy it is!

The key is to pound the breast fillets to be thin so they will cook faster and evenly.  Overcooking will make the meat dry and if the meat is not the even thickness, some parts may be under-cooked while other parts are overcooked.

    Dear Nami,

    That miso paste can single-handedly create a meal with miso soup, miso eggplant and so many other fantastic recipes. I hardly cook chicken breast this way but I should try your pounding method :)

    I’ve not grilled with miso – sounds like a fun and tasty idea. The recipe looks terrific! Glad the Hikari Miso will be available through Amazon – that will save me a trip to a specialty store.

    We also tend to use thighs more than any other part of the chicken Nami, although have a couple of recipe which use chicken breasts. Your grilled miso chicken looks fabulous.

    It sounds delicious, Nami. As someone who uses chicken breasts quite often, I have found the trick to make them less dry: I simply marinate them or just brush on both sides with oil. I also try to make them equally thick, as you have mentioned.

    Now this is a perfect summer meal, Nami! Colorful & nutritious! Miso is such a great pantry ingredient. The only thing I wish is I don’t have to store them in the refrigerator after opening. It takes up so much space:) I know it’s silly! Anyway, I love the big portion of green kale with mango you served on the side. It’s the true version of a Happy Meal.

    Maybe you’ll have the answer. Usually when I see a recipe that calls for miso paste. That’s all they say. Miso paste. Then I get to the store and I see red, yellow and white? Are they interchangeable according to taste or are they very different? GREG

      There are several kinds of miso and each miso has different flavor. I personally like “awase miso” (which is a mix of red and white) which goes well with most dishes. I also like white miso which is commonly used to marinade fish, veggies, meat, etc. The taste, aroma, texture, and appearance of miso are different by region. Temperature, duration of fermentation, salt content, etc make a difference, as well.

      In short, it’s really up to person’s preference. It took me a long time to find my favorite brand of miso since I moved to the US, and finally found one 8 years ago (and now I’m working with them! :)).

    I’ve never cooked with miso. Our discount grocery has a great Asian foods section, but miso is never there! Keeping an eye out though.

    I was just reading an article that miso is a good alternative to soy and teriyaki – less sodium I believe was the reasoning. This chicken looks delicious and another one that would be a hit with Mr. N for sure. :)

    I’ve fast become a chicken thigh fan. Boneless and skinless, they are a terrific and juicy alternative to chicken breast that can become dry. You are so right that pounding to an even thickness really helps. You’re massaged mango and kale salad looks amazing too!

    I love your method and I use pounding mostly on the beef, but in many cases on chicken as well, it’s much easier like you said to cook though. Your grilled miso chicken sounds divine, great recipe and pictures are made with perfection…I love those grilled marks.

    I tried this recipe Monday night for dinner, and it came out fantastic! I actually can’t grill outside where I live, but I grilled the chicken on the Cuisinart Griddler that I won on this site a while ago. Perfect, juicy, delicious chicken.     A quick question for you Nami… I bought white miso paste but somehow A keeps on saying that the taste is not the same he tried in Japan .. do you have any particular brand u prefer. ..
    This looks beaitiful will try it on weekend.

      Hi Reem! Assuming that A goes only to Tokyo, I think he never tasted white miso. White miso is mainly used in Western Japan (kyoto, osaka etc). When he tastes miso something or miso soup, it’s not white miso base. Also, it shouldn’t be Red miso – which is mainly used in Central Japan like Nagoya. So try finding Awase Miso (white + red combo). Is Nijiya far from your home? I’m not too sure if Mitsuwa carry Hikari Miso, but I buy it from Nijiya. I buy Awase Miso shown in this picture (left top box of miso). Hope that helps!

    When I just started eating Japanese food in restaurants, I thought miso is only used as miso soup, but later, I came to know, there are so many variations we can try with miso! Nami, these pictures are making me hungry! I got your point, we have to pound the chicken breasts properly and avoid overcooking. This is lovely!!
