I’m very happy to share an exciting news today!  For the past several months, I’ve been working closely with a Japanese miso company called Hikari Miso.  I developed new recipes using their products and today I want to share my first recipe that I made for Hikari Miso.

 

I am very fortunate that I can work with them because I have been using Hikari Miso’s products for the past 7 years.  After having our first baby (he’s now seven years old), my husband and I started to eat at home more often.  Every week we have miso soup 3-4 times so I was testing many Miso companies’ products.  I was happy I found Hikari Miso’s products and thought it’s one of the best miso I’ve tasted.  Ever since then, I’ve been consistently using their miso.  It’s been really fun to experiment new recipes using different kinds of miso that Hikari Miso offers.

Miso Glazed Eggplant is really easy and delicious dish, perfect appetizer or side dish for upcoming July 4th holiday!  Using the convenient Hikari Miso’s Minute Miso Organic (Original), the dish is done quickly in 15 minutes!

Minute Miso Original

Note: The consistency of Minute Miso is more liquid than typical miso.  If you cannot find Minute Miso – Sweet, you can substitute with 1 Tbsp. miso paste (awase miso or white miso) and 1 Tbsp. dashi stock for 2 Tbsp. Hikari Miso’s Minute Miso.

    I’ve never heard of this brand but I’ll keep an eye out for it the next time I go shopping. As to the eggplant, well, one day it may come up in my on-going attempt to taste new veggies. :)

    By the way, I just bought my first bamboo steamer yesterday in order to make some dim sum dishes and I hope to make one of the steamed dishes that you’ve posted in the past in it. Is there anything in particular you’d recommend … other than desserts?

I’ve never seen Hikari Miso in Montreal but will order it online to try it out – especially since it’s organic. Looking forward to it.

    Looks great, can’t wait to try. The only problem I can see is that when I went to Amazon to get the miso from the recipe [Hikari Miso’s Minute Miso Organic (Original)] it was not available from them, just the Miso Paste – 1 tub, 26.4 oz by Hikari Miso . Will try it with that

      Hi Laura! That is their new product and I also haven’t seen this product at my Japanese stores where they carry other Hikari Miso products. Hopefully this product will be available in Amazon. I’m going to contact Hikari Miso to see if they plan on selling on Amazon.     Nice post Nami. I love miso and especially Nasu Dengaku! I noticed the brand have Saikyo Miso too. When I was working in the F&B industry back in Malaysia, most of the Chefs in the Fine Japanese Restaurant then uses Saikyo Miso in their recipes. What type of recipes do you cook with it?

      Hi Marguerite! Saikyo Miso is from Kyoto and it’s just sweeter than other miso types. You can use it for regular cooking (miso soup, fish, chicken, sauce/dressing, stew…). It’s just a preference. I like to use saikyo miso for fish. It gives really nice flavor. Here’s one example:

    Hi Nami, how lovely to be creating recipes for this Japanese Company – congratulations! Love the recipe, since eggplant (or brinjal as we call it in South Africa, or aubergine as they say here) whatever it’s called, it’s one of our fave veggies, so I’ll try this – and look out for Hikarimiso, cos I love miso in restaurants, but haven’t found a good commercial one here. Jealous of you in Yokohama!!

    I find eggplant by itself to be rather bland, but with your recipe, the chili and other ingredients will give it a nice ‘pzazzz.’ At first, I thought that the product M1nute Miso Organic- Original said ‘ORGASMIC’ instead of ‘Organic.’ I must be reading Maureen’s ‘Orgasmic Chef’ blog too much!

    Thank you for this recommendation. I actually thought of you recently when I was at the Asian market looking at all the Miso options. I was so confused (and they are not that cheap) so I didn’t want to buy the wrong kind and get stuck wasting my money. I wrote down this brand and I hope that my market carries it. I know Whole Foods also carries miso… gotta check them out too if they carry this brand.

    The eggplant looks just delicious. :) I am so excited for this miso to try..I can’t wait to make miso soup soon. :)

    This is something I’ve been meaning to try for a while… I think Raymund from Ang Sarap posted something similar (or maybe it was Sissi… I forget!) a while back and it piqued my interest then. Of course, I actually need to get some miso first. Still don’t have any :p

    Yum! This is one of my favorite ways to eat eggplant ever, and you’ve made it look so beautiful! (Unfortunately Paula doesn’t like miso eggplant very much– even though she loves miso soup!?!– so I don’t get to eat this at home very often, but your recipe seems perfect and delicious.)

    Congrats on the partnership Nami! I’ve used their miso before and it’s been great. I love this eggplant recipe as well. Perfect for the summer time and it has the flavors we enjoy so much.     Congratulations, Nami! Your collaboration sounds very interesting and challenging. I love this brand (my favourite among all those sold here), though the product you mention doesn’t exist in my shop. The eggplant glazed with miso looks very luscious. It reminds me a bit of the grilled eggplant I have learnt thanks to you and have been enjoying for quite a long time.

    I never know what to do with Miso, but I need to start brushing up on my Japanese cooking. It’s the only Asian cuisine that intimidates me. This sounds simple enough. I loved that you also provided an Amazon link for those of us living in out of the way places.

    And enjoy your trip to Japan. I am enjoying your pictures on Instagram. It seems like half my blogger friends are traveling now. How do you manage to maintain a blogging schedule while traveling (I wrote the recipes and made the pictures before I left home, but take a day to finish them before posting).

      Hi Aunt Clara! I think Japanese ingredients may be confusing and hard to get but once you have basic 5 condiments (soy sauce, mirin, sake, miso, rice vinegar), you can pretty much make everything. :) Most of my home cooking meals are simple too. :)

      Thanks for following my IG. I had really crazy schedule prior to my trip because I have to photo shoot for both current posts and future posts… I gave up some weekends too and worked late at night after kids went to sleep. I haven’t written posts yet, so I have to find some time to write a post at night when kids are asleep (which takes one day worth of time if I include everything I have to do for each recipe). Blogging takes so much time and effort…but you are a pro! I have to learn so much from you!

    I remember that my grandfather had eggplants plants, and time to time he sent to each family some of them, but we never liked it, my mother and father yes, but not me.
    Later, for just a recent years I discovered that eggplant is so good, and now I have to deal with my kids to have them a try, like my mother did with us…!!

      Hi Leigh! Thank you so much for your kind words. :) The eggplant will be a little bit wilted, but it absorbs the flavor more, so it will still taste delicious (but the it wasn’t as crispy). This can be eaten at room temperature. :) Hope that helps!
