I have been fascinated with Japanese cooking since I served in the Western Pacific during the Vietnam war. One of our ports of call was Yokosuka and another was Kagoshima. Whenever we were in port I always sought out the local eateries off the beaten path and had some wonderful meals even though the waiters didn’t speak English and I spoke no Japanese. Now that ingredients for Japanese cooking are more easily found in my area of the country I look forward to reproducing some of the wonderful meals that I had. Thank you for launching this endeavor to educate the Western cooks in the delicate flavors of Japanese cuisine.
