What brands of 菜切り包丁 are reputable in Japan? (Or what specific knives do you personally use?) It’s fine if you recommend a Japanese online store; I don’t mind importing with the help of an import agency. I need one with the thin, rectangular blade to be able to chop vegetables (carrots, etc.) finely and safely. My mother has one that is custom-made by a friend of a relative but since I’ve moved into my own place, I’m looking for something not as expensive (under $200). Thanks!
Hi Stephen! I don’t use 菜切り包丁 in my kitchen, so I can’t really recommend. However I use Kikuichi Cutlery and really enjoy using it. They have 菜切り包丁 too (page 24 in their online catalog) but I’m not sure how much it costs. I bought my knife at my local knife store (you can see in my latest videos/posts), but amazon sells it too (not all kinds). Hope this helps. 🙂
