Hi there! Your page is always at the top of my newsfeed list. I love your recipes because most of them are simple but always a crowd pleaser. I’ve tried two of your recipes so far: baked croquette and Japanese Apple salad. I absolutely loved them, especially the healthier alternative for the croquette, and so did the people who ate them! I would like to try your udon recipes next, but I’m having a difficult time trying to find the ingredients for the broth in my local Asian grocery. I might have to order them online if I don’t have any luck the next time I go back to shop. Thank you very much for sharing your recipes. About 20 years ago, my family and I billeted 2 Japanese student sisters in our home in Australia. Since then we were hooked on Japanese food and culture. my wife and I have kept in touch with Misako and Yuko and have visited them in Japan twice since and plan on going again. Piroshiki (Japanese style w/ harusame and ground meat), please! I can’t find this at any restaurant, not even at yoshoku places. (^_^)
And maybe the delicious twice baked sweet potato dessert? My mother used to bake in, mix in cream,, etc, put it back on the potato skin, brush it with egg, and rebate. I think some people put kurogoma to garnish. So delicious in cold weather. (^_^)

amazing your recipes! is there a recipe for wasabi – cucumbers – sugar? I got an recipe from the community in Brasil which is very good but also too sweet. 200g sugar for 1 kg cucumbers and you let it some days rast7ng in the fridge. I also would like to know how much is then a portion and if you could prepare it with other veggies, and if so…with which ones. Dear Nami, Thank you for this well organized website. I’ve tried many of your recipes like miso salmon, spinach ohitashi, green bean shiraae, miso ramen, ramen egg, chashu and egg salad sandwich. Everything is delicious. I like how the videos are short with calm music and no narration. I prefer the Japanese recipes and don’t see the need for Western recipes. Is there a way to weed out the Western recipes in the search function on the left side? The measurements are precise, and the way you give links to Japanese ingredients to further explain them, with pictures, is very helpful. I like it when you specifically mention what your family eats because it helps me distinguish what real Japanese people eat at home versus what is served in Japanese restaurants. I wish I could see a picture of how a Japanese dinner table is set–it would help me to set my own table when I cook Japanese food for my family. Thank you for this excellent website.

Your newsletters are great. It gives me a chance to learn many Japanese dishes my mother would make. What I find very helpful are what I call modernization of some of the dishes like baked tonkatsu. There are two dishes my Mother would make that I did not have a chance to learn and perhaps you’ve already done them. Unfortunately, I never learned the names of the dishes. One is burdock and carrots and the other had hijiki seaweed, carrots and fried tofu.

Have any other gluten free subscribers tried making “panko” with dried potato flakes? I season them and it works really well unless the dish is super moist- then you wind up with tasty mashed potatoes (ha ha!).

You’ve made me a better cook than I ever could be
Both of my parents have Japanese blood. They were born in Mexico, however they went back to Japan to study, since their childhood all the way to the university. They are now 84 and 92 years old and I have a feeling that the older a person gets, the more he misses the food he used to eat when he was a child. So I’m sure they both miss the japanese flavors.
Lately I’ve been trying to prepare japanese food for them. A couple of years ago I discovered JOC! And it has been a blessing! The recipes I’ve tried are delicious! You should see their eyes and face expression when they eat it! They truely enjoy them! Thanks Namiko-san. Kokoro kara hontoni doomo arigatoo gozaimasu!

Thank you so much for all the effort and time you put into your recipes and videos. My husband and I went to Japan for our honeymoon and every time I prepare a meal from your helpful and detailed recipes, it reminds us of that sweet time together. I especially appreciate that you often explain why a particular step is needed and/or what it does as well as the history behind it. It helps me develop as a cook and not just blindly follow without learning.
P.S. I really enjoyed your blog post about your travels in Hakodate, it was one of my favourite cities that we visited. If you ever go again, I highly recommend visiting a restaurant called Kappo Uosei. It is run by a married couple and the food is amazing. Hey~ you have so many recipes that I like, and the best thing is that they aren’t that hard to make (at least those I’ve chosen). Unfortunately (well maybe not really, I feel great), I don’t eat any sugar at the moment so there are some of your recipes I can’t get the “real” taste because I leave out the sugar or replaces it with something else. It’s still very tasty but I’m looking forward to trying them with sugar in to see the difference 🙂

Tried making pickled ginger following your method. My pickled ginger didn’t turn very pink. Is it because my raw ginger didn’t have enough pink parts on them? They tasted yummy though. Thanks very much.
