Apple Salad

Cuisine: Japanese
Keyword: apple, apple celery salad
Prep Time: 30 minutes

I used Myer lemon this time since my friend gave me a lot of organic Myer lemons from her backyard.  It was sweet and really juicy, which added a nice final touch to the salad.

  • 4 Fuji apples
  • 2-3 stalks celery
  • cup raisins

  • 6 Tbsp Japanese mayonnaise (See Note for substitute)
  • 1 cup plain yogurt
  • 2 Tbsp Myer lemon juice (or 1 Tbsp lemon juice)
  • 2 Tbsp sugar
  • Tbsp milk

  1. In a medium size bowl, combine all the ingredients for Dressing. Mix well with a whisk.
  2. Cut round slices of apples in quarters.
  3. Keep apples in salted water (1 tsp. salt for a big bowl of water) for 1-2 minutes to prevent apples from browning. Drain and dry with paper towels.
  4. Slice celery into small pieces.
  5. Add apples, celery, and raisin in the bowl and mix all together. Keep in the fridge till you are ready to serve.

Recipe Notes

Japanese mayonnaise: Use American mayo and add 2 tsp white vinegar and 1 tsp sugar, whisk until sugar dissolves.
