Introducing September 2022 JOC Cooking Challenge!
Welcome back to JOC Cooking Challenge! This is our third challenge since we launched the event back early this year. I hope you had fun making Mosaic Sushi in March and Japanese Milk Bread (Shokupan) in June/July.
What is JOC Cooking Challenge
It’s a quarterly online event on Just One Cookbook where I share a new recipe for you to make at home, and in return, you just need to snap a picture of the final dish and share it with us!
The JOC Cooking Challenge months are March, June, September, and December.
This Month’s Recipe Challenge
The recipe for this month’s challenge is Shio Ramen!
We’re gearing up to prepare more comfort food in anticipation of the cooler temperatures, so I thought a bowl of soothing ramen would be fitting. Don’t worry, this ramen recipe is not going to take up your entire day. There’s some simmering involved but totally doable! Anyone who loves a good noodle soup will enjoy making shio ramen.
Please take time to read the entire post and recipe first, before you head to the kitchen! It’s very important to be well prepared before you start cooking. Remember this is a challenging recipe; therefore, we would like you to follow the recipe as closely as possible so that your end product will look similar to mine.

This contest is open to everyone worldwide. We will randomly select 3 winners at the end of the challenge using random.org. Each winner will receive a $100 Amazon gift card.
Everyone who participates in the JOC Cooking Challenge and sends us pictures of your final dish via email is automatically entered into the prize draw.
Please note that we will NOT select winners based on the creations, but you need to make sure your submission meets the scope of the recipe.
How to Join September 2022 JOC Cooking Challenge
- Recipe: Make my Shio Ramen recipe. Follow the recipe as closely as possible so your end product looks similar to mine.
- Send TWO pictures: 1) one picture of the process of making the homemade ramen broth (while stirring ground chicken, simmering, steeping katsuobushi, or draining the soup), and 2) one picture of your final dish. Send two pictures via email (contest@justonecookbook.com) before 12 pm PST on October 10th, 2022. This counts as an automatic entry for your chance to win the prize (only one entry per person). We’d love to hear your stories about funny moments, kitchen mishaps, or difficulties that you come across during the process. Also, share your picture on social media using #JOCcookingchallenge hashtag.
- Prize winner announcement: We will announce 3 winners (randomly selected) at the bottom of this post in early October and the collages of your creations will be shared as well!

So excited to participate in this month’s challenge, Namiko-san! Question about ingredients: I know the rules state to make the recipe as close to the original recipe, but I got my hands on some quail and quail eggs and thought this might be a nice seasonal substitution for chicken and ajitama – still ok?
Hi Alexis! I hope you enjoy my recipe. That substitute is very close to chicken, you can cook the same way but much less cooking time. I haven’t cooked quail eggs for a while, but I remember it takes 2-3 mins to boil. The meat should be quick, too, so use a kitchen thermometer and make sure you won’t overcook the meat. 🙂 So excited to see a Shio Ramen with quail chashu & ajitama.
Yes, thank you for the reminder, I was planning on reducing cooking time for both the eggs and the chashu to account for the smaller size. Excited to share 鶉の塩ラーメン with you – I will be sure to take lots of picture of this adventure!

So what kind of step by step picture are you asking for? As in one of the mise en place? Or a collage of the entire cooking process?
Hi Bonnie! Sorry I wasn’t clear in the instructions and will update once I get home. I meant one picture while you are making the ramen soup (maybe when you are stirring ground chicken or after adding katsuobushi or any simmering time when you get a chance) so I can see how everyone made soup. Hope this helps!
I’m really excited about this Nami, but I have a question. When you say “One step-by-step picture of you making the ramen soup,” what do you mean exactly? Is it a composite photo composed of many small photos of the process? Thank you for clarifying. I can’t wait to make this!
