Japan is known for the quality of its knives, and Aritsugu (有次), a knife shop in Kyoto, makes some of the best in the country. While we were visiting the new Toyosu Fish Market 3 weeks ago, we stopped by their Tyoko shop to get a gyuto knife for one lucky Just One Cookbook reader!
The gyuto knife is basically the Japanese equivalence of the Western version of a chef’s knife, but the blade is thinner and has a sharper edge. Known for its multipurpose advantage, a gyuto knife is the most popular style of knife used by professional chefs and home cooks in Japan. You can literally use the knife for everything from chopping vegetables, slicing meat or fish! It is one of my favorite knives to use at home, so I hope you’ll enjoy using the knife too.

About Aritsugu
Aritsugu is a Japanese knife shop founded by Fujiwara Aritsugu in 1560. It is one of the oldest knife makers in Japan. The main store is located at the Nishiki Market in Kyoto.

Does Aritsugu have a website and do they ship internationally? I’m completely geeking out about this knife and have to make a contingency plan in case I’m not the luckiest person in the world 😊

I poked around a bit, and it looks like there’s nine knives on Amazon in the Aritsugu store. I’m always afraid of knock-offs, so much research ahead for me before I can buy with confidence. Good luck to you – your boyfriend is very lucky!!
