Nobuko Hashimoto, aka “Hashimoto mama”, is a victim of devastating 2011 Tohoku earthquake and resulting tsunami. In her recently published book, she shares her story about preparing food for over 5000 volunteers in her own kitchen and what impact this had made to her life and volunteers’. She also shares popular tohoku regional recipes that she prepared for the volunteers in this book. The book is written in both Japanese and English.

My favourite food is chicken vegetable soup. I will add more carrot, tomatoes, celeries, and potatoes into my soup. Yummm!
My favorite food would definitely have to be the Salt Broiled Salmon I had for breakfast everyday when I was in Japan, paired with a shiro miso, pickled vegetable, nori and rice. It was my morning ‘cup of coffee’ only so much better.
I love that the book is in both languages (as I am learning Japanese). I am a new follower but I love Japanese food and have missed the simplicity of Japanese home cooking since my time in Japan in 2006. I was overjoyed to find that my husband is being transferred to Japan this August for 2 years to work in Fujisawa. We have 3 children and I am now expanding out my skills to learning about cooking for kids (they have finicky palettes). I love the tips about bentos and freezing things as some of my childrens’ favorite bento foods take a while to make…my tamagoyaki skills leave a bit to be desired when rolling with chopsticks. I can’t wait to try some more of your recipes and see how I can expand my and my family’s recipe book for everyday cooking. Thank you SOOO much for your dedication to this site!

I love Korean stew from Tofu House
My mum (who is Lebanese) makes me kibbeh soup, a local (Lebanese) chicken soup. The kibbeh are little burgul dumplings with herbs. The soup is so tasty with crushed garlic and extra virgin olive oil on top (^^) But none of my Aussie friends will try it, since it’s made from chicken necks. I tell them that’s where the awesome flavour comes from, but they won’t listen…
There’s this other local food that I really like, called roti canai. It’s an unleavened skillet pastry that’s both chewy and crispy! Eaten with dhall and curry, it’s the best tea time (or supper) snack.
