My aunt told me about these popular Kyushu Pancakes (九州パンケーキ) and sent me several packages for me and JOC readers to try!
The ingredients used in this pancake mix all came from different regions within Kyushu. Wheat flour (小麦粉) is from Oita, sugar from Okinawa and Kagoshima, red rice (赤米) from Fukuoka, germ rolled barley (胚芽押麦) from Saga, glutinous millet (もちきび) from Nagasaki, black rice (黒米) from Kumamoto, rice (うるち米) from Kagoshima, and sprouted brown rice (発芽玄米) from Miyazaki.
The texture of the pancakes is unique with slightly grainy texture from 7 kinds of grains. They are not bothering at all and the pancakes are so fluffy and moist and they were really delicious!
If you are in Japan, you can purchase this pancake mix from Amazon and Rakuten. It’s so popular that my aunt had to wait after ordering them.

Japanese mochi flour
Here in Hawaii, we can usually find most Japanese ingredients at our regular grocery stores, but specific items (like a certain Okinawan Supaiman (I think) ume candy I love) can be tougher to find.
In France, I can’t find fresh ramen… After living one year in japan, this is what miss me the most. (with fresh gyoza as close second)
Fresh shiso leaves in Italy: mission impossible! 😉
I have not been able to buy fresh lotus root and burdock. They come frozen in packets and do not taste the same.
The ingredient that’s a little hard to find is good quality matcha powder. It can be expensive here.
It is hard to find bonito flakes in the USA sometimes.
Oops, forgot to tell about the most rare japanese ingredient to find here… Well, there are actually many, but the one you won’t get at all is “real” wasabi (I don’t talk about this green coloured horseradish pastes that may or may not contain wasabi powder less than 3%…)…
First time I hear about Kyushu pancakes! And I wonder how they might taste? It would be lovely to have a package to try… :)))
As I live in a rural area it is very hard to find a lot of ingredients. The one I have never seen at any of the stores within short driving distance is Mirin .
Okonomiyaki flour
Authentic Japanese ingredients are rather difficult to source for over here as only a limited no. of grocers stock them. I would love to grab hold of some matcha powder easily.
In my area it’s practically impossible to get any good Japanese ingredients, but one of the worst is Pickled Plums! A basic! It’s rather Ironic since we do have a grocery with many ingredients for Japanese dishes and other dishes in Asian cuisine but no pickled plums. I can get some great noodles there though so I don’t suffer completely, and Amazon is a life saver.
Gobo is hard to find in Australia,. I’ve tried growing it so many times, too but have never succeeded..
