Hi Nami,
I would love if you could teach me how to use my bonito shaver correcty. I got one a while ago and it’s a lot more difficult to use that I expected. All I get is bonito sawdust when I try shaving the block!!! I have used the katsuobushi sawdust to make dashi broth and is tasted good but I’m sure the dusty shavings are not ideal.
Please help. I want to avoid using powdered dashi.
I have often bought ready shaved katsuobushi but often find them so smokey.
I would be so grateful for any advice.
