Salad dressings are essential standbys for any home cooks. In the case of Japanese salads, it’s the dressings that define even the most ordinary combination of vegetables, proteins, seeds, and grains. We love them for all of these elements: salty against sweet, tanginess moderating the richness of oil, and unexpected spark from umami ingredients.

Here, we’ve put together 11 Easy Japanese Salad Dressings that we know you’ll fall in love with. Each offers endless possibilities and enhances salads, noodles, or rice bowls. Best of all, the ingredients are pantry staples, making these dressings surprisingly easy to prepare at home.

Memorize them, and you’ll always have a perfect accompaniment for your bento lunch box, wafu pasta, or late-night dinner!

Nami’s Tips for Japanese Salad Dressings

  • Use a jar, not a bowl: Put everything in a mason jar with a lid and shake hard until it emulsifies. It is faster than whisking, you can see when the oil and vinegar have come together, and the jar you mixed in is the jar you store it in.
  • They keep 7 to 10 days in the fridge: Store in an airtight container. The miso dressing is the exception and is best inside a week, since fresh miso does not hold as long as vinegar and oil.
  • If it solidifies in the fridge, nothing has gone wrong: That is the oil setting. Let the jar sit at room temperature for 5 to 10 minutes, or microwave it very briefly, about 15 to 20 seconds, then shake it again.
  • Chill for an hour before you serve it: The flavors need time to settle into each other. A dressing tasted straight after mixing is sharper and less balanced than the same dressing an hour later.
