Here is how you can chiffonade leafy vegetables, I used Perilla leaf to show you how to do this.
1. Stack leafy vegetables, in the following example I used Shiso (Perilla) leaves.
2. Roll them tightly.
3. Cut into long thin strips and use as garnish.

Green shiso is pretty difficult to grow here – it was difficult enough to find seeds… I have manage to get one plant growing, but a proffesional gardener has managed better! I will get her plants to our home today. Please give me some advice how to preserve shiso leaves!!!! We can´t find them fresh here, so the only way is to plant ourselves and preserve – BUT HOW???!!!?? And after preserving, how I can use them? As fresh ones?….

Hi Tiina! I have never planted shiso in my yard, but I’ve heard from many JOC readers that shiso is like weed, it’s so easy to grow and they grow fast without caring too much.
Now when the shiso is 7-8 cm, you can harvest them. Sandwich the shiso between damp paper towel and keep in the fridge. But you should use it soon. There are so many ways to use shiso in cooking, garnish, or toppings…
