After working hard for the past several months, I’m extremely happy to announce that my first eBook, Just One Cookbook – Essential Japanese Recipes is here!

During the past 3 years of blogging, I’ve received many interests and inquiries for my cookbook from JOC readers. My reply has always been, “No, I do not have published cookbooks, just the blog to keep all the recipes I love.”
However, with the increasing requests for a cookbook, you’ve convinced me! I realized many of my readers are interested in cooking Japanese food, but when you come to my site it’s not very clear where to start.
So I’ve selected 33 easy and simple recipes that my family, JOC readers, and I love most from Just One Cookbook.

How to cook azuki brand to a soft consistency Can I make it in the pressure cooker XL? Without soaking?
Hi Kay,
Yes! You can make Anko in the pressure cooker without soaking.
We do soak on the regular method, but it’s almost same as soaking or non-soaking, so to make it “extreme quick and easy recipe”, We omitted the extra step. We think 25 minute of pressure cooking will do, but if it’s for 15 mins, maybe soaking overnight will help soften the skin. 🙂

Hi Alice! Yes, desktop, any smartphone would do. And you will need to mix well before adding the flour, then after adding flour, just gently mix. Do not over mix because the cake will be hard and dense. Just gently mix.

Thank you for the beautiful cookbook! Your recipes have been a joy to make and my family enjoys the increasing exposure to Japanese cooking. I truly appreciate your choice to donate your book’s proceeds during these times that need love and compassion. I purchased several copies of your book and will send them to friends and family, who I know would love your cooking. Your Rafute recipe allowed me to recreate some of the Incredible food from a recent trip to Okinawa and helps keep the memories fresh. In Naha, I had a tofu/black sesame dish with the sesame part of the tofu, not just as a sauce, and would appreciate if you or your readers have a recipe for this.
As a technical note, the shopping cart didn’t allow for increasing the number of copies, so I just went through the purchase multiple times.

I’m a little confused. On Amazon it shows a different cookbook cover than on your website. The cookbooks cover looks different from Amazon kindle to your website. Amazon has a picture of spinach and your website has a cover of sushi rolls. Do you only have ONE cookbook or two? Thanks!
