  • Japanese cooking has many cutting techniques, mentori is when you remove the corners from vegetables for simmer dishes.

    Smooth the edge of daikon, carrots, and potatoes before cooking.  If the pieces have sharp edge then they are likely to break into pieces during the cooking process (from bumping into each other).
