I am Apu and I have been trying out various JOC recipes for the past 2 years. I’m a vegetarian so it was always a limitation to try the sushi and there is no consolation as sushi without fish was only cucumber maki or with umeboshi..I quite liked my only two options but ever since I have tried to prepare avocado&cheese maki, it has given a totally new dimension to the taste and experience of enjoying vegetarian sushi. I am next trying various varieties of rice combinations with fruits to make Frushi. I’d love to own the book and give family and friends the joy of devouring vegetarian sushi. I tried a vegan sushi roll years ago that had a bean paste umeboshi center wrapped in brown rice and then nori. Makes my mouth water thinking about it.
Mine would be Salmon belly nigiri. My wife is vegetarian and loves the sundried tomato and cashew that a local store does.
My favorite sushi is salmon roll. I know that is very simple, but salmon has the best flavor and keeping it simple means I can enjoy the flavor of the salmon without much distraction from any other toppings or fillings such as roe or sauces.

My favourite is inarizushi, even if that’s not the most exciting. When you find a sushi place that does the rice just right, even plainer sushi can be amazing.
