Introducing May/June 2023 JOC Cooking Challenge!
Welcome back to JOC Cooking Challenge! This is going to be our second challenge this year. Since we started the cooking challenge last year, we’ve made Mosaic Sushi, Japanese Milk Bread (Shokupan), Shio Ramen, Purin, and your choice of food featured in the Netflix series The Makanai. We’re very excited to be cooking Japanese dishes with you.
What is JOC Cooking Challenge
JOC Cooking Challenge is a quarterly online event on Just One Cookbook where I share a new recipe for you to make at home, and in return, you just need to snap a picture of the final dish and share it with us! The Cooking Challenge months are March, June, September, and December.
This Month’s Recipe Challenge
The recipe for this month’s challenge is Shoyu Ramen from Bizentei, Tokyo!
This Shoyu Ramen recipe came from Bizentei, a ramen shop in the neighborhood street of Chiyoda, Tokyo. If you haven’t watched the documentary film, Come Back Anytime by John Daschbach, read this post for more details and watch the film now!
To make this recipe for the challenge, please take time to read the entire post and recipe first, before you head to the kitchen!
This recipe requires a total of 6 hours of inactive soup broth simmering time. Inactive cooking time means that the soup broth is being made on its own while you go about your business. You have to stay at home (for safety) but you don’t need to be in the kitchen. And the active prepping time is only about 30 minutes. Trust me, it’s very easy to follow and I would consider this a beginner recipe.

Acceptable Substitutions
- If you’re vegetarian or vegan, make my Vegetarian Ramen recipe (skip eggs for vegan).
- If you don’t eat pork, make my Shio Ramen recipe.

We hope this challenge encourages you to host a fun Come Back Anytime watch party with your family and friends. Make this recipe ahead of time and enjoy the shoyu ramen while you watch the film with your guests!

This contest is open to everyone worldwide. We will randomly select 3 winners at the end of the challenge using random.org. Each winner will receive a $100 Amazon gift card.
Everyone who has completed submission for the JOC Cooking Challenge is automatically entered into the prize draw.
Please note that we will NOT select winners based on the creations, but you need to make sure your submission meets the scope of the recipe.
How to Join June 2023 JOC Cooking Challenge
- Recipe: Make my Shoyu Ramen recipe. Follow the recipe as closely as possible so your end product looks similar to mine.
- Send TWO pictures: 1) one picture of the process of making the soup broth with bones and aromatics, and 2) one picture of your final dish. Send those two pictures via email (contest@justonecookbook.com) before 12 pm PST on June 30, 2023. This counts as an automatic entry for your chance to win the prize (only one entry per person). We’d love to hear your stories about your “Come Back Anytime” watch party (if you hosted one), funny cooking moments, kitchen mishaps, or difficulties that you come across during the process. Also, feel free to share your picture on social media using #JOCcookingchallenge hashtag.
- Bonus (NEW!): If you leave a comment with an image of your final dish in the Shoyu Ramen recipe post (NOT in this post), we will count your comment as another entry! We understand it’s an additional step and we appreciate your feedback, which will help us and others who want to try the recipe!
